চাঁদপুরের পদ্মা-মেঘনা নদীর মোহনার ইলিশ (Hilsha/Hilsa Fish) সারাবিশ্বে বাঙালি ভোজনরসিকদের কাছে এক অনন্য নাম। চাঁদপুরকে বলা হয় “ইলিশের বাড়ি” (The Home of Hilsa)। ভৌগোলিক অবস্থান এবং প্রাকৃতিক পরিবেশের কারণে এখানকার ইলিশের স্বাদ ও সুগন্ধ অন্য যেকোনো জায়গার ইলিশের চেয়ে সম্পূর্ণ আলাদা ও অতুলনীয়।
মিষ্টি পানির প্রভাব: ইলিশ মূলত সামুদ্রিক মাছ হলেও ডিম ছাড়ার জন্য তারা সমুদ্র থেকে নদীর দিকে আসে। সমুদ্রের নোনা পানি থেকে যখন ইলিশ পদ্মা-মেঘনার মোহনার মিষ্টি পানিতে প্রবেশ করে, তখন এদের শরীরের নোনা ভাব কেটে যায় এবং চর্বির স্তর (Fat content) বহুগুণ বেড়ে যায়। এই চর্বিই ইলিশের আসল স্বাদের উৎস।
তীব্র স্রোত ও শারীরিক গঠন: পদ্মা ও মেঘনার তীব্র স্রোতের বিপরীতে সাঁতার কাটার কারণে এই মাছগুলোর শরীর অত্যন্ত সুগঠিত এবং মাংস আঁটসাঁট (firm) হয়।
প্রাকৃতিক খাবার: মোহনা অঞ্চলে ইলিশের প্রধান খাবার হলো প্রচুর পরিমাণে ওমেগা-৩ সমৃদ্ধ ফাইটোপ্ল্যাঙ্কটন ও জুপ্ল্যাঙ্কটন (অনুবীক্ষণিক উদ্ভিদ ও প্রাণী)। এই পুষ্টিকর খাবার খাওয়ার ফলে মাছের স্বাদ ও সুগন্ধ অনন্য উচ্চতায় পৌঁছায়।

Due to its geographical location and natural environment, the taste and aroma of the Hilsa here are completely distinct and incomparable to Hilsa from any other place.
Influence of Freshwater: Although Hilsa is primarily a marine fish, they migrate from the sea to the rivers to spawn. When Hilsa enters the freshwater of the Padma-Meghna confluence from the salty seawater, the salinity of their body decreases, and the fat content multiplies. This fat is the true source of Hilsa’s authentic flavor.
Strong Currents and Body Structure: Due to constantly swimming against the strong currents of the Padma and Meghna, the body of these fish becomes highly well-structured, and the flesh becomes firm.
Natural Food: The primary food for Hilsa in the confluence area is an abundance of omega-3-rich phytoplankton and zooplankton (microscopic plants and animals). Consuming this nutritious food elevates the taste and aroma of the fish to an extraordinary level.
